    I love this oil-free vegan granola recipe so much that I usually have it every morning for breakfast.  Combine the homemade granola cereal with fruit and you have a filling breakfast that will give you energy for hours.  It's not very sweet so I add berries and bananas as a natural sweetener.  Fresh or frozen berries work great to add to the granola and top it off with plant-based milk.    

    Homemade granola is cheaper than store-bought box stuff and no added sugar or oil.  It's also easy to create and the recipe can be easily cut in half if needed.  

    The vegan granola needs to cook long enough to dry out in the oven and become crispy.  It needs to be a thin layer of granola to obtain crispiness if it's piled up the granola will just steam. Keep an eye on it so it doesn't burn and it will continue to crisp up when it's cooling.  Stir the granola every 10-15 minutes while baking to help it cook evenly.  When it's done let it cool completely and store in an airtight container.  It will last about a week.

    I updated the recipe to add dates for a little more sweetness.  If your dates are not soft, soak the dried fruit in hot water for about 10 minutes to soften them up so they blend easier.  Even if you buy pitted dates I would recommend double-checking that they are pitted before adding them to the blender.  I learned the hard way of not checking first, sometimes one or two in the bag get missed.  If you liked the older version just skip the step with the dates, and enjoy.

    Description

    Oil-free granola sweetened with ripe bananas and dates.


    Ingredients

    Scale
    • ½ cup dates (pitted)
    • 2 large very ripe bananas
    • 1 cup unsweetened applesauce
    • 6 cups old fashioned oats
    • 1 cup raw walnuts or pecans (chopped)
    • ½ cup raw sunflower seeds
    • ½ cup raw pumpkin seeds
    • 2 tsp ground cinnamon
    • 1 tsp salt
    • ½ tsp ground ginger
    • ½ tsp ground nutmeg

    Instructions

    1. If the dates are firm soak the dried fruit in hot water for 10 minutes.
    2. Preheat the oven to 275˚F (135˚C).
    3. Drain the dates.  Then add the dates, bananas, and applesauce to a blender and blend until smooth.
    4. Mix the oats, nuts, seeds, and all seasonings in a large bowl.
    5. Then add the blended mixture to the bowl and stir to combine everything.
    6. Spread the mixture onto two cookie sheets lined with parchment paper or silicon mats.
    7. Bake for 40-45 minutes and stir every 10-15 minutes.
    8. Let cool and then store in an air tight container.
