Banana Cinnamon Overnight Oats

Description

Creamy banana cinnamon overnight oats for an easy sweet treat for breakfast.  The oats combine ripe bananas with cinnamon and the optional peanut butter to flavor hearty rolled oats for a filling meal.


Ingredients

Scale
  • 1/2 ripe banana, mashed
  • 1/2 cup old-fashioned oats
  • 1/2 cup dairy-free milk
  • 1 tablespoon ground flax seeds or 2 teaspoons chia seeds
  • 2 teaspoons maple syrup
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon natural peanut butter (optional)

Topping

Sliced banana or other fresh fruit

Chopped walnuts, pecans, or peanuts

Chocolate chips

Peanut butter


Instructions

  1. Mash half a ripe banana in a container with a lid.  Then mix in the rolled oats, dairy-free milk, ground flax seeds, maple syrup, ground cinnamon, and peanut butter (if using).
  2. Stir well and let them soak for at least 2 hours in the refrigerator for the oats to soften.
  3. Before enjoying give the oats a good stir, then add any toppings.

Notes

I make multiple at one time and use jars for individual servings.  Multiple servings can also be made together in a large container.  In this case either let is sit to thicken then portion out or keep all of the servings together and remove a portion as needed for breakfast.
