Beet and Blueberry Smoothie

Description

This blueberry and beet smoothie blends the earthy flavor of beets with sweet blueberries, ripe bananas, and a tangy orange.


Ingredients

Scale
  • 1 beet (210 grams), ends trimmed, peeled, and sliced
  • 1  1/2 cups (210 grams) frozen blueberries
  • 1 frozen banana
  • 1 navel orange, peeled
  • 1  1/2  (354 ml) cups water

Instructions

  1. Wash and peel the raw beet, and then dice it.
  2. Peel the orange.
  3. Add the beet pieces to the blender and pulse until they are broken up.  This helps prevent pieces from getting stuck under the blades and not blending up.
  4. Then add the frozen blueberries, ripe banana, peeled orange, and water to a blender.
  5. Blend until smooth.

Notes

If you use a smaller beet, you may want to reduce the water in the recipe.

Make sure to remove most of the white pith from the orange.

If you don’t have a high-speed blender, you may want to dice the peeled beets small so they’ll blend more easily.

If you use all fresh blueberries instead of frozen, the smoothie won’t be chilled.
