Cherry Overnight Oats

Description

These cherry overnight oats are creamy, easy to make, and packed with cherry flavor in every bite. 


Ingredients

Scale
  • ½ cup (70 g) frozen sweet pitted cherries
  • ½ cup (45 g) old-fashioned rolled oats
  • ½ cup (118 ml) dairy-free milk
  • 1 tablespoon (15 g) almond butter
  • 1 tablespoon (7 g) ground flaxseed
  • 2 teaspoons maple syrup, or to taste
  • ½ tablespoon fresh lemon juice, optional
  • ⅛ teaspoon almond extract, optional

Instructions

  1. Thaw the cherries in the refrigerator overnight or in the microwave.  If using the microwave, let them cool before adding to the rest of the ingredients.
  2. Then mash the thawed cherries with a fork; don’t discard the cherry juice.
  3. Combine the cherries, the cherry juice, oats, dairy-free milk, almond butter, ground flaxseed, maple syrup, lemon juice (if using), and almond extract (if using) in a jar or another airtight container. Stir well until everything is combined.
  4. Store covered overnight or at least three hours to thicken up. 
  5. Keep covered in the refrigerator for up to 3-4 days.

Notes

Lemon juice is optional, but a small squeeze can brighten the flavor.

Check for cherry pits.  Even though the bag of frozen cherries says pitted, I sometimes still find pits.
