Description
This flavorful Mexican-inspired brown rice with salsa is easy to put together with a few simple ingredients.

- 1 cup uncooked brown rice
- 1 1/2 cups water (plus a couple of extra tablespoons as needed)
- ½ cup salsa
- 1 teaspoon ground cumin
- ½ teaspoon salt, or to taste
- fresh chopped cilantro, optional (add to taste)
Instructions
- Add the brown rice, water, salsa, cumin, and salt to a pot.
- Bring to a boil, then reduce the temperature to low to simmer, and cook covered for 40-45 minutes or until the rice is done. If your salsa is very thick you may need a couple of extra tablespoons of water.
- When the rice is cooked remove it from the heat and keep the lid on to steam for 10 minutes. Then fluff the rice and garnish with fresh cilantro for more flavor.
Notes
The recipe is not for quick cooking or instant brown rice.
The time needed for cooking varies based on the rice and the temperature at which it simmers. Be sure to cook the rice on low heat once it comes to a boil.
