Vegan Baked Oatmeal with Frozen Berries

Description

This vegan baked oatmeal is made with rolled oats, frozen berries, applesauce, and flaxseed. It’s egg-free, dairy-free, oil-free, banana-free, and great for meal prep.


Ingredients

  • 2 tablespoons (12 grams) ground flax seed (+ 4 tablespoons water)
  • 2 cups (180 grams) old fashioned oats or quick-cooking oats
  • 1  ½ teaspoons ground cinnamon
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • 1  ⅓ cups (320 ml)dairy-free milk
  • ½ cup (105 grams) unsweetened applesauce
  • ¼ cup (60 ml) maple syrup
  • 1 teaspoon vanilla extract
  • 1  ½ cups (200 grams) frozen berry blend
  • ⅓ cup (35 grams) chopped walnuts or pecans

Instructions

  1. Preheat the oven to 35o F (180 C) and lightly grease an 8 x 8 inch baking dish.
  2.  In a small bowl, make the flax egg by mixing 2 tablespoons of ground flaxseed with 4 tablespoons of water.  Let it sit and gel for 10 minutes while you prep the rest of the ingredients.
  3. In a large bowl, mix the rolled oats, ground cinnamon, baking powder, and salt.
  4. Then mix in the flax egg, dairy-free milk, applesauce, maple syrup, and vanilla into the oat mixture.
  5. Fold in the frozen berries and walnuts (or pecans).
  6. Pour the mixture into the baking dish and spread it out evenly.
  7. Bake for 40-45 minutes or until the middle is set (but still softer than the edges) and the edges have firmed up.  If using quick-cooking oats, check at 35 minutes.
  8. Let cool for 10-15 minutes before serving.  They are soft right out of the oven and firm up at room temperature.
  9. Enjoy them warm or cold.

Notes

Don't thaw the frozen berries.

If you're using strawberries, make sure they are sliced or quartered, not whole.

Rolled oats soften while still keeping some texture. Quick-cooking oats create a firm bar that holds together more than rolled oats.

For cleaner slices, cool completely, then refrigerate until firm.
