Description
These refreshing pineapple coconut popsicles with lime juice are made with just four simple ingredients for a summer treat. They’re naturally dairy-free, gluten-free, and vegan!
Ingredients
- 3 cups frozen pineapple, partly thawed
- 1/2 cup coconut cream
- 1 lime, juiced
- 1 tablespoon maple syrup, or to taste
Instructions
- Let the frozen pineapple thaw enough to puree. Then add the pineapple, coconut cream, and lime juice to a blender and blend. You may need to let the mixture thaw more if it doesn't pour easily into the popsicle molds.
- Taste and add maple syrup if needed.
- Pour the mixture into popsicle molds, insert sticks, and freeze for 6 hours or overnight.
Notes
The coconut cream can be bought in a can or you can refrigerate a can of full-fat coconut milk overnight. Simply open the refrigerated can and scoop out the coconut cream on top. Some cans are duds and their contents will not separate for that needed coconut cream, so opt for a brand you like and have luck with.
Fresh pineapple can be used instead of frozen.
