Description

This is an easy roasted red pepper dressing that combines the sweet, smoky flavor of roasted red peppers with cashews to create a creamy dressing.


Ingredients

Scale
  • 1/2 cup raw cashew, soaked overnight then drained
  • 1 roasted red bell pepper, seeds and skin removed if using homemade
  • 1/3 cup water
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons maple syrup
  • 2 teaspoons dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Add the drained cashews in a blender along with the rest of the ingredients and blend until smooth.
  2. Taste and adjust if needed.

Notes

Use homemade or store-bought roasted red bell pepper in a jar.

Store-bought roasted red peppers in a jar usually already have the seeds and skin removed.

Small blenders work well for dressings.
