Description
Easy strawberry chia seed pudding made with fresh or frozen strawberries and a pinch of ground cinnamon.
Ingredients

- 1/2 cup (70 grams) frozen or fresh strawberries (don’t thaw frozen)
- 1/2 cup (125 ml) dairy-free milk
- 2 teaspoons maple syrup, or to taste
- 1 teaspoon lemon juice
- Pinch of ground cinnamon
- 3 tablespoons (30 grams) whole chia seeds
Instructions
- To a blender, add the strawberries, milk, maple syrup, lemon juice, and ground cinnamon. Then blend until smooth. A small personal blender works best for small single-serving portions.
- Add the strawberry milk to a jar or container with a lid, then stir in the whole chia seeds.
- Let the chia pudding sit for about 10 minutes, then stir again to separate any clumps. Cover and refrigerate overnight.
- Before enjoying, stir the chia pudding, then add any toppings.
Notes
Not all chia seed brands gel well after a couple of hours. If the brand you’re using gels quickly, you may not have to let them soak overnight.
No need to thaw frozen strawberries.
A small personal blender (like a Nutribullet) works best for small single-serving portions.
Don't use warm milk; the lemon juice will curdle it.
