Apple Cinnamon Plant-Based Oatmeal

Description

This 5-minute apple cinnamon plant-based oatmeal is filling, quick, and easy.  With this recipe, it only takes a few minutes to have a warm healthy breakfast for those cool crisp fall mornings.


Ingredients

Scale
  • 1/2 cup old-fashioned oats
  • 3/4 cup water or dairy-free milk
  • 1 apple, diced
  • 1 date, diced (or sweetener of choice, add to taste)
  • ¼ teaspoon lemon juice, optional
  • 1 tablespoon ground flax seed

Instructions

  1. Dice the apple small enough to cook in the microwave and dice the date (if using) small enough to get lots of little bits throughout the oatmeal.
  2. In a microwave-safe bowl stir together the oats, diced apple, diced date, lemon juice, and dairy-free milk or water.  Heat in the microwave for about 2 minutes. Times will vary depending on your microwave and your desired consistency for the oatmeal.
  3. Let it cool for at least a minute in the microwave.
  4. Add the ground flaxseed, a dash of cinnamon, and chopped pecans or walnuts.  The ground flax seed will thicken up the oats, if it’s too thick add dairy-free milk to thin them out. 
  5. Stir to combine and enjoy.

Notes

The bowl needs to be large and deep enough for everything to fit and have room for the oats to boil and not boil over.  In the bowls I use, the uncooked oats and liquid take up less than half of the bowl's capacity.
