Cherry Nice Cream

Description

This easy cherry nice cream is made with frozen cherries, bananas, and almond extract for a creamy vegan dessert with no ice cream maker needed.


Ingredients

Scale
  • 2 frozen ripe bananas, sliced into ½ inch coins before freezing
  • 3 cups (430 grams) frozen pitted cherries
  • ½ teaspoon almond extract
  • ¼-½ cup dairy-free milk (if needed)

Instructions

  1. Add everything (except the milk) to a food processor or high-speed blender with a tamper stick.  You may need to let the fruit partly thaw for 1 to 2 minutes, so it'll puree more easily.
  2. Pulse to break up the frozen bits, then continue pureeing until thick and creamy.  Stop to scrape down the sides when needed.
  3. Start with ¼ cup of plant-based milk if the bananas and cherries are not pureeing.
  4. Serve it immediately for soft serve, or freeze for a couple of hours for scoopable nice cream.
  5. If you freeze it for later and it's too hard to scoop, then let it sit on the counter for 5-10 minutes.

Notes

If you freeze the nice cream overnight or longer, it will be more difficult to get scoopable nice cream.
