Cilantro Lime Cashew Dressing (Vegan and Dairy-Free)

Description

This creamy cilantro cashew dressing is bright, tangy, and bursting with fresh cilantro-lime flavor. 


Ingredients

Scale
  • ½ cup raw cashews, soaked overnight
  • ½ cup fresh cilantro (with tender parts of the stems)
  • ½ cup water
  • 3 tablespoons of fresh lime juice
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon maple syrup
  • ¼ teaspoon salt, or to taste
  • ¼ teaspoon of crushed red pepper (optional)

Instructions

  1. Add all of the ingredients to a blender and blend until smooth.
  2. Stop and scrape down the sides as needed and add any additional water to reach your desired consistency.  Taste and adjust seasonings.

Notes

The 3 tablespoons of lime juice can come from 1-2 limes, depending on their size and juiciness.

The ½ cup of cilantro is packed; if you want an even more cilantro flavor, add more.
