Easy Flaxseed Pudding

Description

Flaxseed pudding is a nutritious and delicious way to start your day or enjoy it as a healthy dessert.  It has a creamy texture and nutty flavor that is paired with mashed banana and strawberries.


Ingredients

Scale
  • 1/2 cup frozen strawberries, thawed
  • 1/2 ripe banana, mashed (optional)
  • 4 tablespoons ground flaxseeds
  • 1/3-1/2 cup dairy-free milk (1/3 for thicker)
  • 1-2 teaspoons maple syrup, or to taste
  • 1/4 teaspoon ground cinnamon
  • Toppings: granola, fresh berries

Instructions

  1. Thaw the strawberries if frozen, I like to lightly mash them at the bottom of the jar to have a strawberry layer.  Then in a separate bowl mash the banana (if using) and mix in the ground flax seeds, dairy-free milk, maple syrup, and ground cinnamon into the mashed banana.  If you’re not doing the frozen berry layer then everything can be mixed in one container.
  2. Carefully pour the banana flaxseed mixture on top of the mashed berries.

  3. Let soak for at least 1 hour up to overnight.
  4. Add topping before consuming.

Notes

If you don’t care about having a layer on the bottom, fresh berries can be added the night before or morning of.  Frozen blueberries or raspberries can be added to the top the night before and thaw overnight.

Adjust the maple syrup to taste.

Use 1/3 cup of dairy-free milk for a thicker pudding and 1/2 cup for a thinner pudding.

I let the flax seed pudding set separate from the strawberries for the photos to prevent more bleeding between the two layers.
