Description

Overnight oats with PB2 (peanut butter powder) are easy to make and packed with peanut butter flavor.  They can easily be customized by adding berries, sliced bananas, or chocolate chips.


Ingredients

Scale
  • 1/2 cup (50 grams) old fashioned oats
  • 1/2 cup + 3 tablespoons dairy-free milk
  • 3 tablespoons (19 grams) PB2 (see notes about PB2 Pure)
  • 1 teaspoon maple syrup, or to taste
  • 1 tablespoon ground flaxseeds

Instructions

  1. In a jar or container with a lid, mix the rolled oats, dairy-free milk, PB2, ground flaxseeds, and maple syrup.
  2. Let them soak for at least 3 hours for the oats to soften and thicken up.
  3. Add a splash of milk if the oats are too thick and more maple syrup if they are not sweet enough.

  4. Before consuming, give them a good stir and add any toppings.

Notes

If you use PB2 Pure which does not contain sugar or salt, you may want to increase the maple syrup to 2 teaspoons or 1 tablespoon depending on how sweet you like your oats.

Tablespoons of PB2 are tightly packed.

Don’t mix the PB2 separately with water as per container instructions, just add the powder to the oat mixture with the rest of the ingredients and stir.  The peanut butter powder will thicken the oats, which is why you need the extra 3 tablespoons of dairy-free milk.
