Ingredient notes and substitutions
The PB2 overnight oatmeal uses simple ingredients, but please see the recipe card below for the exact measurements.
Old-fashioned oats - They are the basis for my easy overnight oat recipes. I like to stick to old-fashioned rolled oats for the best texture. The whole grains soak up the liquid to become soft and creamy.
If you need gluten-free, use certified gluten-free oats. Rolled oats cannot be substituted with steel-cut oats since they take longer to break down. Quick-cooking oats break down much quicker and may become mushy.
Dairy-free milk - Any non-dairy milk will work. Try it with unsweetened almond, oat, soy, or cashew milk. Some milks are creamier than others, use your favorite. Most of my recipes use a 1:1 ratio of milk to oats, but the powdered peanut butter will soak up more liquid so I use an additional 3 tablespoons of milk. If the PB2 overnight oats come out too thick for your liking, then stir in another splash of milk.
PB2 - PB2 is a brand of peanut powder. I only tested with the original that has sugar and salt, and the PB2 Pure that does not contain sugar or salt. So I can’t say for sure how other brands will work. If you use PB2 Pure, you may want to increase the maple syrup depending on how sweet you like your oats.
If you substitute with regular peanut butter, I would only use 1 tablespoon, maybe 2 if you want it really peanut buttery.
Maple syrup - Pure maple syrup can be substituted with your sweetener of choice. When I use the regular PB2 that has sugar and salt added to it, I only use 1 teaspoon of maple syrup. For the PB2 Pure that does not have any added sugar or salt I use 1 tablespoon of maple syrup, but always adjust to your preference for sweetness.
Ground flaxseeds - Ground flaxseeds can be substituted with ground chia seeds or whole chia seeds. For more recipes with flax seeds try flaxseed pudding with banana and strawberries. For chia seed recipes try chia breakfast bowl or oat milk chia pudding.
Tips
- Overnight oats tend to thicken the longer they sit. If you're prepping for multiple days, you might want to add a splash of milk or water to thin out the oats if they have thickened too much.
- Different brands of powdered peanut butter may thicken differently so if you use a brand other than PB2 you may have to adjust the liquid.
- The overnight oats with PB2 recipe is for one serving but multiple can be made at one time to use for make-ahead breakfasts.
- Don’t mix the PB2 separately with water as per container instructions, just add the powder to the oat mixture with the rest of the ingredients and stir. The peanut butter powder will thicken the oats, which is why you need the extra 3 tablespoons of dairy-free milk.
- If the oats are too thick, add a splash of milk to thin out.
- If the oats are too thin, add a little powdered peanut butter at a time to thicken.
How to make overnight oats with peanut butter powder
For the simple recipe, you'll need a jar or container with a lid.
In the container mix the rolled oats, dairy-free milk, PB2, ground flaxseeds, and maple syrup.
Let them soak for at least 3 hours for the oats to soften. Stir them before enjoying. Add a splash of milk if the oats are too thick and more maple syrup if they are not sweet enough.
Serving suggestions
Our favorite way to enjoy the PB2 overnight oats is with blueberries and sliced banana. Add any fresh fruit to the meal prep breakfast the morning you plan on having the oats.
- Add a sliced banana for a peanut butter-banana flavor combination.
- Drizzle fruit preserves on top for a peanut butter and jelly combination.
- Top it with fresh blueberries, diced strawberries, or raspberries. Thawed frozen blueberries also work well.
- Enjoy it with cocoa nibs or chocolate chips.
- Sprinkle chopped peanuts on top in the morning.
Storage
Overnight oats without fruit toppings will last around 5 days in the refrigerator in an airtight container. Add the fresh fruit the morning you plan on consuming it. If you’re using frozen berries add them the night before you plan on enjoying them, they’ll thaw overnight. The frozen berry liquid will soak into the oats, or you can thaw them separately.

No, you don't have to soak the oats overnight but that does give the oats more time to soften and thicken up for a creamy texture. They do need to be soaked for at least 3 hours for the oats to soften and for the ingredients to soak up the liquid.
