Description
Creamy strawberry overnight oats can be made with fresh or frozen strawberries for an easy, hearty 10-minute breakfast meal prep.

- 1/2 cup (75 grams) sliced fresh strawberries
- ½ cup (118 milliliters) dairy-free milk
- 1 tablespoon maple syrup
- ½ tablespoon lemon juice
- 1/4 teaspoon vanilla extract
- ½ cup (48 grams) old-fashioned rolled oats
- 1 tablespoon (7 grams) ground flaxseed
- ½ teaspoon ground cinnamon
- Small pinch of salt
- Toppings: diced fresh strawberries
Instructions
- Blend the strawberries, milk, maple syrup, lemon juice, and vanilla extract until smooth.
- Mix the oats, flaxseed, cinnamon, and a pinch of salt together in a wide-mouth jar or a small container with a lid.
- Add the wet ingredients to the dry and mix until combined.
- Refrigerate for 3 hours or overnight to set.
- Before serving, stir the oats and top with diced fresh strawberries.
- Since it's fresh fruit, I would consume it within 2 to 3 days.
Notes
Frozen strawberries can be substituted for fresh. They make the oats thinner, so I would reduce the amount to 1/3 cup (44 grams) if using frozen.
No need to thaw frozen strawberries when making strawberry milk.
Don't use warm milk; the lemon juice may curdle it.
