Description

Creamy strawberry overnight oats can be made with fresh or frozen strawberries for an easy, hearty 10-minute breakfast meal prep.


Ingredients

Scale
  • 1/2 cup (75 grams) sliced fresh strawberries
  • ½ cup (118 milliliters) dairy-free milk
  • 1 tablespoon maple syrup
  • ½ tablespoon lemon juice
  • 1/4 teaspoon vanilla extract
  • ½ cup (48 grams) old-fashioned rolled oats
  • 1 tablespoon (7 grams) ground flaxseed
  • ½ teaspoon ground cinnamon
  • Small pinch of salt
  • Toppings: diced fresh strawberries

Instructions

  1. Blend the strawberries, milk, maple syrup, lemon juice, and vanilla extract until smooth.
  2. Mix the oats, flaxseed, cinnamon, and a pinch of salt together in a wide-mouth jar or a small container with a lid.
  3. Add the wet ingredients to the dry and mix until combined.
  4. Refrigerate for 3 hours or overnight to set.
  5. Before serving, stir the oats and top with diced fresh strawberries.  
  6. Since it's fresh fruit, I would consume it within 2 to 3 days.

Notes

Frozen strawberries can be substituted for fresh.  They make the oats thinner, so I would reduce the amount to 1/3 cup (44 grams) if using frozen.

No need to thaw frozen strawberries when making strawberry milk.

Don't use warm milk; the lemon juice may curdle it.
