Tomato Avocado Toast

Description

Creamy avocado and sweet ripe tomatoes on toast is a delicious and versatile meal.  Enjoy this easy recipe for breakfast, a simple lunch, or a quick dinner.


Ingredients

Scale
  • 3-4 slices of bread depending on the size of the slices
  • 1 ripe avocado
  • 1-2 tomatoes, sliced
  • 2 teaspoons fresh lemon or lime juice
  • ⅛ teaspoon of garlic powder
  • Pinch of salt, or to taste
  • Toppings: sauerkraut, balsamic glaze, everything bagel seasoning

Instructions

  1. Toast the bread in a toaster or an oven.
  2. Slice the avocado in half vertically, and remove the pit.
  3. Remove the avocado flesh from the peel, place it in a bowl with lemon juice, garlic powder, and salt, then mash. You can leave it chunky or continue mashing until smooth.
  4. Taste and adjust seasonings if needed.
  5. Spread on toast and top with tomato slices.  I like to sprinkle a little salt on top of the tomato slices.
  6. Then top with toppings.

Notes

The tomato avocado toast is best enjoyed immediately.  The lemon juice only helps the avocado from immediately turning brown.
