Ingredient notes for the basic ingredients

Avocado toast with tomato is a simple recipe, but please see the recipe card below for the full list and measurements.

An avocado, a lemon, two slices of bread, a tomato, a bowl of seasoning, balsamic glaze, and a bowl of sauerkraut.

Bread - I opt for thick slices of sourdough or whole-grain bread, but any hardy bread will do.  It needs to be sturdy enough to hold toppings. Try roasted strawberry toast with cream cheese and lemon for another way to enjoy toast.

Avocado - Make sure the avocado is ripe and has no soft spots.  For more recipes with avocados, try hummus sandwich with avocado, avocado lime crema, or guacamole.

Tomatoes - We enjoy vine-ripened tomatoes, but use your favorite.

Lemon or lime - Either one will work for the mashed avocado.  The juice will help prevent the avocado from browning.

Garlic powder and salt - Add to season the mashed avocado.  Adjust the salt to suit your preferences.

Tips

  • The tomato avocado toast is best enjoyed immediately.
  • Quality fresh ingredients are best.  Nothing ruins avocado toast more than overripe avocados.  
  • Pick an avocado based on when you'll use it.  For example, don't pick one that's perfectly ripe if you won't use it for a few days.
  • For an added garlic flavor, once the bread has toasted and is still warm, lightly rub part of a peeled garlic clove over the toast.  (Don't use the entire clove, only part of it).  If you add the garlic to the toast, you can skip the garlic powder in the mashed avocado.

Enjoy the tomato and avocado toast with just salt and pepper or try a different variation.  Here are a few suggestions:

  2. A drizzle of balsamic glaze
  3. Everything bagel seasoning
  4. Crushed red pepper flakes
  5. Fresh chopped parsley, cilantro, or basil
  6. Sprinkle of sprouts
  7. Balsamic pickled onions
  8. Spicy pickled onions
  9. A dollop of pesto
  10. Vegan feta cheese

Enjoy avocado toast on its own or pair it with a dairy-free smoothie or an easy fruit salad with lime juice.

How to make toast with avocado and tomato

1. Toast the bread in a toaster or an oven.  

2. Slice the avocado in half vertically, and remove the pit.

3. Remove the avocado flesh from the peel, place it in a bowl with lemon juice, garlic powder, and salt, then mash. You can leave it chunky or continue mashing until smooth.

4. Taste and adjust if needed.

5. Spread on toast and top with tomato slices. I like to sprinkle a little salt on top of the tomato slices.

6. Then top with toppings. Enjoy the toast with sauerkraut, balsamic glaze, everything bagel seasoning, or check out the section on toast variations for more ideas.

Frequently asked questions

How to pick a ripe avocado?

To check for ripeness, gently press the avocado (not too hard, as it might bruise). It should feel firm but yield slightly under pressure. Ripe avocados are neither too soft and mushy nor too firm and hard. Once you find a good one, inspect it for soft indentations. Soft spots might indicate that the avocado is overripe or bruised.

How to store avocados?

If the avocado is not ripe, store it on the counter.  Once it has ripened store it in the refrigerator.

How do you ripen an avocado faster?

Place the avocado in a brown paper bag with an apple or banana to ripen faster.

    We tried the sauerkraut and balsamic glaze as toppings and enjoyed them both. I'm new to adding sauerkraut to food for the fermented benefits and I really like it with tomato and avocado. Thank you for the recipe!
