Roasted curry cashews, sweetened with maple syrup and a little kick from cayenne pepper. They’re sweet, spicy, and salty with aromatic spices from the curry powder.

My other recipe for sweet and spicy roasted cashews and walnuts is a big hit with my family, so I thought it would be fun to try it with curry powder. The curried cashews are ready in less than 20 minutes, super easy to put together, and my recipe uses simple ingredients.
How to make curry cashews
Mix the maple syrup, curry powder, onion powder, salt, and cayenne pepper in a bowl; then stir in the cashews and coat with the syrup mixture.
A silicone spatula works great to scoop up the sauce and coat the cashews.
Afterward roast your seeds on a baking tray lined with a silicone mat for 12-15 minutes, stirring halfway through. How easy is that? Then out comes some delightfully roasted spiced curried cashews. They're great for snack time or a fun little appetizer.
Substitutions
- The maple syrup acts as a sweetener and holds the seasonings on, making these curry cashews oil-free. So if you substitute it with something else, use another liquid sweetener like agave syrup.
- I didn’t test the recipe with any other nut, but almonds would probably be pretty good. Just make sure they are unsalted and not roasted. Depending on the nut or seed you may need to increase or decrease the amount of time to roast.
Tips
- The curried cashews will still be soft when pulled out of the oven, but they will firm up as they cool.
- When testing, the cashews browned more quickly with unbleached parchment paper, so I would recommend just using a silicone mat for oil-free roasting. The mat acts as a shield from the heat coming from the pan, so sometimes it prevents browning in certain recipes. In this case, using a silicone mat protects the nuts from burning since we don’t have the oil to protect them.
- Keep an eye on them while in the oven so they don’t burn and stir halfway through. This will ensure more even roasting.
Storage
Cool the spicy roasted cashews completely before storing them in an airtight container at room temperature for about 2 weeks.

- 1 cup (120 g) raw cashews
- ½ tablespoon curry powder
- ½ tablespoon (7.5 ml) maple syrup
- ½ teaspoon onion powder
- ¼ teaspoon salt
- Pinch of cayenne pepper
Instructions
- Preheat oven to 350 F (180 C).
- Mix the maple syrup, curry powder, onion powder, salt, and cayenne pepper in a bowl, then stir in the cashews and coat.
- Spread out the nuts on a baking tray lined with a silicone mat. Roast for 12-15 minutes, stirring halfway through.
