A sweet, tangy, and refreshing passion fruit mocktail that features strawberries, mint, and sparkling water for a delightful non-alcoholic beverage.

The mocktail is simple to make and can be assembled directly in your glass, so there's no need for a shaker. Muddle the strawberries and maple syrup in the glass, add the mint, thawed passion fruit puree, and then top it off with sparkling water.

This non-alcoholic cocktail pairs sweet fresh strawberries, aromatic mint, and tangy passion fruit puree with refreshing sparkling water. For more refreshing beverages, try a pineapple slush or a mango agua fresca.

Frozen passion fruit puree - I use frozen passion fruit puree because it's easier to find at my local store and is often more affordable than fresh passion fruit. The frozen brand I buy tastes quite different from fresh; fresh passion fruit is sweet and tart, whereas the frozen puree I have access to tends to be more sour. Be sure to buy a brand that contains only one ingredient: seedless passion fruit puree.  If you replace the puree with fresh passion fruit pulp, you might need to adjust the sweetener in the recipe.

Fresh strawberries - Fresh strawberries give a better flavor to the mocktail than frozen ones.  Use two medium fresh strawberries or three small strawberries.  If you do substitute with frozen strawberries, thaw them first.

For a simpler version of the passion fruit mocktail recipe, I tested blending the thawed passion fruit puree, strawberries, and sweetener. It's a personal preference, but that version lost a lot of the strawberry flavor. So instead, I opt for mashing the strawberries with a muddler for the recipe.

Maple syrup - Maple syrup is used to balance the sourness of the thawed frozen passion fruit puree. This can be replaced with cane sugar or agave syrup. Adjust the sweetener to your taste.  

Mint - Be sure not to over-muddle your mint, as this can cause it to release a bitter flavor.

Sparkling water - Use plain sparkling water or try a flavored version.

Tips for muddling strawberries

  • Dice the strawberries to make quick work of muddling.
  • If you don't have a muddler, the end of a wooden spoon works well as a substitute.
  • Place the berries and maple syrup or sugar in the bottom of your glass.  Use a firm pressing and twisting motion to mash the berries to release the juice.
  • Muddle the strawberry pieces until they are small enough to fit through a straw.
  • If you use cane sugar, be sure to add it to the strawberries and mash them together to dissolve the sugar.
  • We enjoy having strawberry pieces in the non-alcoholic cocktail, but if you don't, you can always strain the mixture after muddling, then add the passion fruit puree, ice, and sparkling water.

Tips for making the non-alcoholic cocktail

  • I muddle the strawberries before adding the mint to prevent over muddling the mint; if it's over-muddled, it can have a bitter taste.
  • The brand of frozen passion fruit puree I tested with is more sour than fresh ripe passion fruit, which is sweet and tangy.  Always adjust the sweetener to suit your preferences.

Variations

  • Add lime juice or muddle lime wedges with the strawberries.
  • Use kombucha or flavored sparkling water instead of plain sparkling water.

How to make a mocktail with passion fruit

1. Add the strawberries and maple syrup to a highball glass.

2. Use a muddler to crush the ingredients at the bottom of the glass into a mushy liquid blend.  You want the strawberry pieces small enough that they will fit through a straw.

3. Add the mint leaves to the strawberries and muddle a few times to release the mint flavor.

4. Add the thawed passion fruit puree, then add 4-6 ice cubes.

5. Next, add the sparkling water and give it a good stir.  To minimize the amount of foam, tilt the highball glass and pour the sparkling water in slowly.

6. Garnish with mint sprigs.

Frequently asked questions

Can I make the mocktail ahead of time?

Part of the mocktail with passion fruit can be made ahead of time and stored in an airtight container in the refrigerator; however, after testing, the fresh version had a brighter flavor.
Muddle the strawberries with the maple syrup or sugar, then add the thawed passion fruit puree and stop there.  Store the mixture in the refrigerator for about 2 days.  Wait to add the mint, ice, and sparkling water until you're ready to enjoy the mocktail.

Can I use fresh passion fruit?

I tested using the pulp of one ripe passion fruit per serving, but we didn't like the seeds in the mocktail, and it wasn't as flavorful. A ⅓ cup of frozen passion puree, once thawed, makes about ¼ cup of liquid. The passion fruits I tested with didn't produce that much liquid. To make a substitute, you can strain the passion fruit pulp to remove the seeds and then add pineapple juice, orange juice, or mango puree to boost the flavor.

Can I make a pitcher?

Adjust the recipe to account for how many servings you want in your pitcher. One serving of the mocktail with sparkling water and no ice is around ¾ of a cup.
To blend multiple servings of strawberries and maple syrup or sugar, try using an immersion blender (also known as a stick blender).  Then add the mint and proceed with the rest of the recipe.

Ingredients

  • 2 fresh strawberries, hulled and diced
  • 2 teaspoons maple syrup or cane sugar, add to taste
  • 3 fresh mint leaves
  • ⅓ cup (39 grams) frozen passion fruit puree, thawed
  • Ice cubes
  • ½ cup (118 ml) sparkling water

Instructions

  1. Measure out ⅓ cup of frozen passion fruit puree and then thaw it.
  2. Add the strawberries and maple syrup (or cane sugar) to a highball glass.
  3. Use a muddler to crush the ingredients at the bottom of the glass into a mushy liquid blend.  Get the strawberry pieces small enough that they will fit through a straw.
  4. Add the mint leaves to the strawberries and muddle a few times to release the mint flavor.
  5. Add the thawed passion fruit puree, and add 4 or 6 ice cubes.
  6. Then add the seltzer water and give it a good stir.  To minimize the amount of foam, tilt the highball glass and pour the sparkling water in slowly.
  7. Garnish with mint sprigs.

Notes

Two medium strawberries or three small strawberries.
