    Pineapple Beet Smoothie

    Since transitioning to a plant-based diet, I am actively trying to consume a variety of different vegetables and more of them. Nowadays I love my veggies!  I like them so much that I wanted to find a way to like beets. Hence, the creation of the pineapple beet smoothie!

    So far I’ve tried them many different ways, and blended is my preferred method for consuming them.  For someone who doesn’t like these vibrant root vegetables, I’ve come to love beet smoothies.  It’s all about experimenting with different flavors and different ways of preparing food to find what we like. 

    This root vegetable gives an earthy taste to the smoothie.  That may sound strange when talking about food, but it’s actually quite delightful.  Then it’s sweetened with frozen pineapple and fresh orange juice. 

    The banana gives the smoothie some creaminess and the spinach just blends into the background covered by beets, pineapple, and orange flavor. For more smoothies with pineapple try our island green smoothie, orange carrot ginger smoothie, spinach pineapple banana smoothie, or pineapple cucumber smoothie.

    Drink this beet smoothie for breakfast, a snack, or post-workout.  I prefer them as an afternoon pick-me-up.  They also work great as an after-school snack for kids, since it’s nutritionally dense for those growth spurts.

    No need to cook or peel the beets, just rinse them, scrub them well, trim off the leafy greens, and quarter them.  The skin can be consumed, and it’s loaded with nutrients.  If you use fresh pineapple instead of frozen, you might want to add some ice to chill the smoothie.  If you’re not a fan of beets, then try half of a raw beet first instead of a whole one.

    Description

    Vibrant pineapple beet smoothie is naturally sweet, delicious, and packed full of nutrients.


    Ingredients

    Scale
    • 1 raw beet (scrubbed clean, quartered)
    • 1 orange (peeled and halved)
    • 1 ripe banana
    • 1 ½ cup frozen pineapple
    • 1 cup dairy-free milk
    • 2 handfuls of raw spinach

    Instructions

    1. Place everything into a blender and blend until smooth.

    Notes

    When peeling the orange make sure to remove the white bitter pith.

        I think it should work as long as you like the flavor of beets from a jar. If they have a strong flavor, you can always start with less and then add more.
