    Wheat Berry Breakfast Bowl

    This is a simple yet hearty and nourishing wheat berry breakfast bowl that uses fresh fruit, yogurt, maple syrup, and cinnamon.  Let’s keep it simple!  The wheat berries can be prepped ahead of time; so when morning comes just warm up the wheat berries and add the toppings.

    How much will one cup of dry wheat berries yield?

    About 3 cups of cooked wheat berries.  The recipe below is for ¾ cup cooked, so 1 cup dry will produce about 4 servings.  

    How to Cook Wheat Berries on the Stovetop

    Rinse the wheat berries in a colander and drain. Add wheat berries and water to a pot.  You will want a 3:1 ratio, for 1 cup of wheat berries add 3 cups of water. 

    Bring to a boil and then lower to a simmer and cover.  Cook for about 45-60 minutes, checking after 45 minutes.  If they’re not done, continue cooking, checking every 5-10 minutes.  

    When the wheat berries are done, you’ll see that the kernels are plump and some have begun to split.  They should be chewy, not mushy or tough.  It’s best to taste them to see if they’re done.  Drain and cool.

    How to Cook Wheat Berries in the Instant Pot

    Rinse the wheat berries in a colander and drain. Add the rinsed wheat berries and water to an instant pot and close the lid.

    Move the venting valve to seal, and cook on high pressure for 30 minutes.  It may take about 10 minutes to come to pressure.

    When time is up let them naturally release pressure for 10-15 minutes, then manually release any remaining pressure by moving the valve to venting. Drain the wheat berries and cool.

    Where to Buy Wheat Berries?

    You may find wheat berries at a health food store near the rice, but I purchase mine from Amazon.

    Tips

    • I cook one cup of dry wheat berries at a time and use them for meal prep instead of making one serving at a time.  They’re ready for me in the morning and I have fewer dishes.
    • The wheat berries can be served warm or cold.  For the breakfast bowl, I like to warm up leftover wheat berries just to take the chill off them from being stored in the fridge.
    • Mix the unsweetened yogurt with maple syrup in a bowl then add the rest of the ingredients, or just pile everything in a bowl and give it a good stir.
    • Add yogurt, maple syrup, and ground cinnamon to taste.  The wheat berry breakfast bowl isn’t really a recipe, more of a suggestion.

    Storage

    The wheat berries can be cooked ahead of time and stored in the fridge for 4-5 days in an air-tight container.  Then heat up individual portions when you’re ready to eat.

    Ingredients

    Wheat Berries (Makes 4 servings)

    • 1 cup (180 g) uncooked hard red winter wheat berries
    • 3 cups (709 ml) of water

    Wheat Berry Breakfast Bowl (Makes 1 Serving)

    • ¼ cup (45 g) uncooked hard red winter wheat berries (about ¾ cup cooked)
    • ½ cup (113 g) Silk plain soy yogurt (or your favorite plant-based yogurt), or to taste
    • ⅓ cup (55 g) fresh blueberries (or your favorite berries)
    • 1 banana, sliced
    • 2 teaspoons maple syrup, or to taste
    • Sprinkle with ground cinnamon, to taste

    Instructions

    To Cook Wheat Berries on the Stove

    1. Rinse the wheat berries in a colander and drain.
    2.     To Prepare Breakfast Bowl

    1. Mix the maple syrup and yogurt together.
    2. Then add the cooked wheat berries, banana, blueberries, and cinnamon.
    3. Alternatively, add all of the ingredients for the breakfast bowl to a bowl and give it a good stir to combine the maple syrup and yogurt.
