This 3-ingredient chia pudding with oat milk is an easy make-ahead breakfast that's great for meal prep. Chia seeds soak in creamy oat milk to create a thick, spoonable pudding that you can customize with your favorite flavors and toppings.

The basic recipe uses chia seeds, oat milk, and maple syrup, with optional cinnamon or vanilla for extra flavor. Keep it simple, or top it with fresh fruit, granola, nuts, seeds, or nut butter. My favorite combination is diced mango and sliced banana, similar to this breakfast chia bowl.

Ingredient notes

Only a few simple ingredients are needed to make chia pudding with oat milk. See the recipe card below for the exact measurements.

A bottle of ground cinnamon, maple syrup, oat milk, whole flax seeds, and a bottle of vanilla extract.

Oat milk - Use an oat milk you enjoy drinking, since its flavor will come through in the pudding. I tested the recipe with refrigerated oat milk, shelf-stable oat milk, and barista-style oat milk. All three worked well, with only slight differences in thickness after the pudding was refrigerated overnight.

I did not test with extra-creamy oat milk, so I cannot say for certain how it will affect the consistency. Brands can also vary in sweetness and creaminess, even when labeled unsweetened, so adjust the maple syrup to taste. Use leftover oat milk to make oat milk hot chocolate or oat milk chocolate pudding.

Chia seeds - Either whole black or white chia seeds will work. For the best results, use fresh chia seeds, since older seeds may not absorb the liquid or thicken as well. After trying several brands, some brands thicken slightly better than others.  For another easy dairy-free option, try pineapple chia pudding.

Maple syrup - Pure maple syrup adds sweetness, but agave syrup or date syrup can be substituted. Start with the amount listed in the recipe and adjust it depending on your preference and how sweet your oat milk tastes.

Tips and troubleshooting oat milk chia pudding

  • Adjust the serving size - Use 1 tablespoon of chia seeds for every ¼ cup of oat milk. For one breakfast serving, use 3 tablespoons of chia seeds and ¾ cup of oat milk. For a smaller snack, use 2 tablespoons of chia seeds and ½ cup of oat milk. Adjust slightly based on your preferred consistency.
  • Stir the pudding twice - Mix the chia seeds and oat milk thoroughly, let the mixture rest for 10 minutes, then stir it again. Chia seeds begin to gel quickly and can clump together, so the second stir helps distribute them evenly.
  • Give it enough time to thicken - The pudding will still be loose after 10 minutes, and it's still too thin after 1 hour. It should be thick and spoonable after about 3 hours and will reach its thickest, most even texture after refrigerating overnight.
  • Clumpy or still crunchy? - Stir thoroughly 10 minutes after preparing the pudding to break up clumps and redistribute the seeds. If needed, let the pudding rest for another 30 minutes and stir again. Allow it to soak overnight if some seeds are still crunchy after 3 hours. The chia seeds should be evenly distributed and surrounded by a soft gel before serving.
  • Too thin? - Let the pudding chill overnight to continue thickening as the seeds absorb the liquid. If it is still too thin after chilling, stir in a small amount of chia seeds and refrigerate it again; check after 1 to 2 hours.
  • Too thick? - Stir in a splash of oat milk at a time until it reaches your preferred consistency.

How to make chia pudding with oat milk

This recipe makes one serving. To prepare multiple servings for meal prep, divide the ingredients among individual jars or containers.

1. Combine the ingredients. For each serving, add the oat milk, chia seeds, maple syrup, vanilla, and ground cinnamon (if using) to each container with a lid. Whisk thoroughly to combine.

2. Stir again after 10 minutes. Let the mixture rest for 10 minutes, then stir well to break up any clumps and redistribute the chia seeds.

3. Chill until thickened. Cover and refrigerate for at least 3 hours. For the thickest and most even texture, refrigerate it overnight.

4. Check the consistency. The finished pudding should be soft and spoonable. It may slowly fall from a spoon, but it should not be soupy.

5. Add the toppings. Stir the pudding once more, then add your favorite fruit, granola, nuts, seeds, or other toppings before serving

Flavor options

Oat milk chia pudding has a mild flavor, making it easy to customize. You'll want to add these ingredients when mixing the pudding unless otherwise noted.

  • Chocolate - Add 1 tablespoon of cocoa powder and increase the maple syrup to 1 tablespoon to balance the bitterness (but add to taste). Top with cacao nibs or vegan chocolate chips before serving.
  • Mango coconut - Add ½ cup of diced mango after the pudding has set. Top with shredded coconut before serving.
  • Banana - Stir in ½ of a ripe mashed banana. Top with chopped walnuts or berries before serving. For more banana breakfast ideas, try overnight banana oats or banana steel-cut oats.  The mashed banana will darken the pudding after being refrigerated overnight.  This variation is best enjoyed within 2 days of preparing.
  • Apple cinnamon - Increase the optional cinnamon to ½ teaspoon and top with cooked, diced apples before serving.
  • Peach - Stir in diced peaches or add them just before serving, then top with oil-free granola.
  • Lemon raspberry - Mix in 1 teaspoon lemon juice and top with fresh raspberries before serving. For another raspberry breakfast, try raspberry overnight oats.
  • Coconut - Replace the oat milk with refrigerated coconut milk (not full-fat canned). Top with coconut flakes, raspberries, or banana slices before serving.
  • Cranberry pumpkin seed - Stir in 1 to 2 tablespoons of dried cranberries and top with shelled pumpkin seeds before serving.
  • Strawberry preserves - Add 1 tablespoon of strawberry preserves to the bottom of a jar. Make the chia pudding and refrigerate it until thickened, then spoon it over the preserves and top the pudding with diced strawberries before serving. You may also enjoy these overnight oats with strawberries, which blend strawberries with the milk.

Toppings

You can keep the chia pudding plain and add one or more toppings just before serving.

  • Fresh fruit - Try berries, mango, banana, kiwi, peaches, apples, or dragon fruit.
  • Crunchy toppings - Add granola, chopped nuts, pumpkin seeds, sunflower seeds, hemp seeds, or toasted coconut.
  • Nut or seed butter - Spoon it on top or stir it into the pudding. Mixing it in may loosen the texture slightly.
  • Dried fruit - Try raisins, dried cranberries, or chopped dates.
  • Dessert-style toppings - Add vegan chocolate chips, cacao nibs, or coconut whipped cream.

Storage

Store the oat milk chia pudding in an airtight container in the refrigerator for up to 5 days. For the best texture and freshness, add fruit just before serving.

If you prepare the pudding with berries or mango, enjoy it within 2 to 3 days. Wait to add sliced banana until you are ready to eat, since it browns and softens quickly.

The pudding will continue to thicken as it chills. Stir in a splash of oat milk before serving if needed.

Chia seed oat milk pudding FAQs

What is the best chia pudding ratio?

Use 1 tablespoon of chia seeds for every ¼ cup of oat milk. For one breakfast serving, use 3 tablespoons of chia seeds and ¾ cup of oat milk. Adjust the ratio slightly if you prefer a thicker or thinner pudding.
If it is too thin after chilling, stir in a little more chia seeds and let it thicken again. If it is too thick, add a splash of oat milk.

Can I use sweetened or flavored oat milk?

Yes, sweetened or flavored oat milk should work in this chia pudding. Since it can add extra sweetness and flavor, reduce or omit the maple syrup as needed. Vanilla oat milk adds a mild vanilla flavor, while chocolate oat milk provides a chocolatey variation. The final thickness may vary slightly depending on the brand.

Can I use ground chia seeds?

I didn't test with ground chia seeds, so I can't say for sure how well they would work.

Can I make chia oat milk pudding without maple syrup?

Yes, you can omit the maple syrup or replace it with agave syrup or date syrup. For a naturally sweetened option, blend 1 to 2 pitted Medjool dates with the oat milk until smooth, then mix in the chia seeds. If you use smaller Deglet Noor dates, you may need 2 to 3.
If you use sweetened or flavored oat milk, you may not need any additional sweetener. You can also sweeten the pudding with mashed ripe banana, fruit preserves, or toppings such as mango, berries, or sliced banana.

Why is my chia pudding too thin?

There could be several different reasons the pudding is too thin.  Your chia seeds may be old and didn't gel well; some brands thicken better than others; the oat milk or other dairy milk may not be very creamy; or the pudding may not have chilled long enough (overnight is best).  It can also remain thin if clumps of chia seeds were not broken up and stirred back into the mixture while preparing.
If it is still too thin, stir in a small amount of chia seeds and let it chill for another 30 to 60 minutes. For a thicker pudding next time, use slightly less oat milk or increase the amount of chia seeds.

Ingredients

  • 3 tablespoons (33 grams) chia seeds
  • ¾ cup (177 ml) oat milk
  • 2 to 3 teaspoons maple syrup, or to taste
  • ¼ teaspoon vanilla extract, optional
  • ¼ teaspoon ground cinnamon, optional
  • Toppings - berries, mangoes, bananas, granola, nuts, or dried fruit

Instructions

  1. Whisk everything together in a container or jar that has a lid or can be covered.
  2. Wait 10 minutes and give the pudding another good stir until there are no clumps.  Push down any seeds that are stuck to the sides of the jar.
  3. Cover and refrigerate to thicken for at least 3 hours, but overnight is best.
  4. Once it has thickened, stir again, then add your toppings.  If the chia pudding is too thick, add a splash of dairy-free milk to thin it out.

Ground cinnamon and vanilla are optional but recommended to add flavor to the chia pudding.

Whisk the chia pudding with a fork when you initially mix the ingredients, then again after 10 minutes, and once more before consuming.  This method has worked for me for the different chia seed brands I've tried.  If you still have clumps, you may need to stir as noted above, plus give it a good stir after it has soaked for another 30 minutes to 1 hour.
