These vegan pumpkin overnight oats are an easy make-ahead breakfast made with pumpkin puree, rolled oats, dairy-free milk, ground flaxseed, maple syrup, pumpkin pie spice, and a touch of peanut butter. These creamy pumpkin spice overnight oats have plenty of warm fall flavor and take about 5 minutes to prepare before chilling overnight.

Ground flaxseed helps thicken the oats without chia seeds, while the pumpkin puree and peanut butter add richness without yogurt. Enjoy them cold for breakfast, as a snack, or add a dollop of coconut cream for a simple dessert.

Ingredient notes and substitutions

The recipe uses simple ingredients, but please see the recipe card below for exact measurements.

A bowl of dairy-free milk, peanut butter, maple syrup, vanilla extract, pumpkin pie spice, ground flaxseeds, pumpkin puree, and rolled oats.

Old-fashioned oats - Rolled oats give the best texture for overnight oats. Quick oats can become mushy, and steel-cut oats are not a good substitute for this recipe. For pumpkin oatmeal made with steel-cut oats, try my pumpkin steel-cut oatmeal.

Dairy-free milk - Use your favorite plant-based milk, such as almond, oat, soy, cashew, or refrigerated coconut milk (not full-fat canned). I prefer a 1:1 ratio of milk to oats, but you can always adjust that for your preferences.

Pumpkin puree - Use plain pumpkin puree, not pumpkin pie filling. Pumpkin puree can vary in thickness by brand, and homemade puree may be thinner and more watery than canned. I have not tested this recipe with homemade pumpkin puree. Store leftover pumpkin in an airtight container in the refrigerator and use it in oil-free vegan pumpkin muffins, pumpkin baked oatmeal, pumpkin steel-cut oatmeal, smoothies, or another batch of overnight oats.

Natural peanut butter - Adds richness and depth of flavor to the overnight oats. Almond butter can be used instead. For more oatmeal recipes with peanut butter, try banana cinnamon overnight oats or chocolate peanut butter overnight oats.

Pure maple syrup - Adds sweetness and pairs well with the pumpkin and warm spices. Adjust it to taste, or substitute agave syrup if needed.

Ground flaxseed - Helps thicken the oats as they chill and gives this recipe a creamy texture without chia seeds. You can use whole chia seeds instead if preferred.

Pumpkin pie spice - Adds the warm spices that give these pumpkin pie overnight oats their classic fall flavor. You can use ground cinnamon instead for a simpler flavor.

Vanilla extract - Adds a little extra flavor and complements the pumpkin and spices, but it can be omitted if needed.

Tips

  • Give the oats time to soak - For the best texture, refrigerate overnight. They can be enjoyed after at least 3 hours, but the consistency will be thinner.
  • Adjust the consistency - If the oats are thicker than you prefer, stir in a little more dairy-free milk before serving.
  • Mix well - Make sure all of the oats are coated in the liquid so they soften evenly.

Topping ideas

These overnight oats with pumpkin are delicious on their own, or add your favorite toppings before serving. For meal prep, add crunchy toppings and fresh fruit right before eating for the best texture.

How to make pumpkin overnight oats

  1. Combine the ingredients - Add all of the ingredients to a small bowl, jar with a lid, or airtight container. Stir well until everything is combined.
  2. Chill - Cover and refrigerate for at least 3 hours, or preferably overnight, to allow the oats and ground flaxseed to absorb the liquid and thicken.
  3. Stir and serve - Give the oats a good stir before serving. Add a splash of dairy-free milk if you prefer a thinner consistency, then add your favorite toppings.

Storage

Refrigerator - Store the overnight oats in an airtight container in the refrigerator for up to 5 days. For the best texture, enjoy them within 3 days. The oats will continue to soften and thicken as they sit.

Can I make overnight oats without chia seeds?

Yes, this recipe uses ground flaxseed instead of chia seeds to help thicken the oats as they chill.

Can I make vegan pumpkin overnight oats without yogurt?

Yes, this recipe does not use yogurt. Pumpkin puree, dairy-free milk, ground flaxseed, and peanut butter help create a creamy texture.

How long do pumpkin overnight oats need to soak?

Let the oats soak in the refrigerator for at least 3 hours, but for the best texture, refrigerate them overnight. After 3 hours, the oats will be softer, but the consistency may still be thinner than when soaked overnight.

Can I warm pumpkin pie overnight oats?

Yes, if you prefer them warm, transfer the oats to a microwave-safe bowl and heat until warmed through. Stir in a splash of dairy-free milk if they become too thick.

Why are my overnight oats too thick?

Ground flaxseed helps thicken the oats as they chill. If they are thicker than you prefer, stir in a little more dairy-free milk before serving.

Why are my pumpkin overnight oats too thin?

Description

Pumpkin overnight oats are an easy, vegan, make-ahead breakfast made with pumpkin puree, peanut butter, flaxseed, and warm pumpkin pie spice. They can be prepped in 5 minutes!


Ingredients

Scale
  • ½ cup (45 g) old fashion oats (rolled oats)
  • ½ cup unsweetened dairy-free milk
  • ⅓ cup (75 g) pumpkin puree (not pumpkin pie filling)
  • 1 tablespoon (16 g) natural peanut butter
  • 1 tablespoon maple syrup, or to taste
  • 1 tablespoon (7 g) ground flaxseed
  • ½ teaspoon pumpkin pie spice or ground cinnamon
  • ½ teaspoon vanilla extract

Instructions

  1. Add all of the ingredients to an airtight container or a jar and stir well.
  2. Cover and refrigerate overnight for the best texture, or for at least 3 hours if needed. After 3 hours, the oats will have softened but may not be as thick as they are after an overnight soak.
  3. Stir before serving, then add your favorite toppings.

Notes

Natural peanut butter is just peanuts and maybe salt.  If you use peanut butter with added sugar and/or oil, it may alter the taste.

    Oh man, these are GOOD! They taste like pumpkin pie! They're filling, because, well, oatmeal; but they're not too heavy. I can't recommend these enough for somebody trying to get a taste of fall, or just somebody that likes pie for breakfast!
